The Art of Grilling
How to Grill Delicious Meat
Heat and seasoning make a remarkable difference.
BBQ grilling tips
1
First, bring it to room temperature
Take meat from the refrigerator 30–60 minutes before grilling for even, juicy results.
2
Pat dry; salt just before grilling
Pat the surface dry. Salting immediately before grilling prevents excess moisture and improves browning.
3
Use two stages for thick cuts
Wrap thick cuts in foil and cook slowly over low heat, then sear over high heat. Thin cuts need only a quick high-heat grill.
4
Do not move it; turn only once
Leave it untouched until browned and turn only once; too much handling dries it out.
5
Let it rest
Rest for a few minutes before slicing so the juices settle. For seafood, try foil-grilling fresh fish from Sajima or Misaki.
